Welcome to the first edition of the Hoboken Uptown Farmers' Market Newsletter sponsored by the Hoboken Quality of Life Coalition. This Thursday, June 20th (from 2:00 to 7:00) you'll find the best Jersey Fresh produce within walking distance of your home. The Hoboken Uptown Farmers' Market is excited to announce a few new vendors in the mix this season. Stony Hill Farm
You'll find amazing produce weekly from Stony Hill Farm - like garlic scapes (see recipe below), rhubarb, crisp red radishes and tender green asparagus.

Gina's Bakery
Looking for an easy, no-cook meal idea? Serve Gina's golden, baked focaccia with a healthy homemade salad. Gina's Bakery has a delicious selection to choose from including tomato, zucchini and caponata - a scrumptious mixture of eggplant, onions, and capers.

Country Stand Farms
Ruby red strawberries, Country Stand Farms will have them this week! Plan on getting your greens as well, Walt says they'll be bringing romaine and kale. Why not try this beautiful kale pomegranate salad that you can make ahead?

Hoboken Farms
Hoboken Farms has a delicious selection of naturally prepared foods, including their famous tomato sauce "Big Red" and delectable mozzarella. Try their incredible "ready-to-cook" crab cakes, an ideal appetizer to serve at your next cook-out - just bake and serve with tartar sauce.

Dr. Pickle
Dr. Pickle offers a wide range of savory pickles - including pickled green tomatoes, mushrooms, and a refreshing "fresh" pickle - perfect for garnishing cocktails, adding to veggie platters, or serving along side your favorite sandwich.

Weekly Recipe

Garlic Scape Pancakes (by Skinny Chef Jennifer Iserloh)

Makes 6 large pancakes

1 cup all purpose flour
1 cup oat flour
2 eggs, beaten
2 1/2 cups water
8 garlic scapes, thinly sliced
1/2 teaspoon baking powder
pinch of salt
Cooking spray
4 teaspoons olive oil

Place both types of flour in a large bowl. Add the eggs, water, scapes, salt, and baking powder. Using a wooden spoon, mix until smooth, batter should be thin, like a crepe batter.

Heat a small skillet over medium heat. Pull the skillet off the heat and coat with cooking spray. Add 1 teaspoon of the oil. Add 1/2 cup of the batter, turning the skillet to spread the batter. Cook 3 to 4 minutes until set and golden brown on bottom.

Turn over with the help of a spatula or plate (or flip it in the air if you dare) and cook 1-2 more minutes until the pancake is cooked through. Repeat three more times with the cooking spray, oil, and batter. Serve immediately with soy sauce or your favorite healthy dipping sauce.

Tip: Don't have oat flour on hand? Just place 1 1/4 cups quick oats into your coffee grinder and process for 1 cup of oat flour.
