Garlic Scape Pancakes (by Skinny Chef Jennifer Iserloh)
Makes 6 large pancakes
1 cup all purpose flour
1 cup oat flour
2 eggs, beaten
2 1/2 cups water
8 garlic scapes, thinly sliced
1/2 teaspoon baking powder
pinch of salt
4 teaspoons olive oil
Place both types of flour in a large bowl. Add the eggs, water, scapes, salt, and baking powder. Using a wooden spoon, mix until smooth,
batter should be thin, like a crepe batter.
Heat a small skillet over medium heat. Pull the skillet off the heat and coat with cooking spray. Add 1 teaspoon of the oil.
Add 1/2 cup of the batter, turning the skillet to spread the batter. Cook 3 to 4 minutes until set and golden brown on bottom.
Turn over with the help of a spatula or plate (or flip it in the air if you dare) and cook 1-2 more minutes until the pancake is cooked through. Repeat three more
times with the cooking spray, oil, and batter. Serve immediately with soy sauce or your favorite healthy dipping sauce.
Tip: Don't have oat flour on hand? Just place 1 1/4 cups quick oats into your coffee grinder and process for 1 cup of oat flour.
